Sexy Sugar Syrup

sugTake your friends by surprise and give them a gift from the heart. Hand-made, yet super chic, these sugar syrups will dazzle epicureans and non-foodies alike. Dress them up in funky bottles, and experiment with exotic flavour combinations.

Basic sugar syrup

2 cups sugar
2 cups water

Flavour combos

Fresh ginger and lime zest
Lemongrass
Red chilli
Vanilla bean
Mixed whole spices – cinnamon, star anise, cloves, cardamom pods.

Mix together sugar and water in a medium pot. Bring to the boil over medium heat.
Cool and then add spices or herbs. Pour into bottles or jars and store in the fridge.

Tip: The longer you leave the spices to infuse, the better the flavour. Perfect for decorating your kitchen. Or, try adding them to cocktails or serve over ice cream for something a little different.

Swahili Quencher

This refreshing drink is popular throughout Eastern Africa. Sweet and filing, it’s often used as a meal substitute and is consumed during Ramadan to replace lost salt and restore blood-sugar levels.

2 medium avocadoes, stone removed, peeled and roughly chopped
1 lime, juiced
2 tablespoons of castor sugar
600ml water or milk

Place all the ingredients in a blender and puree. Add extra water or milk to thin if desired. Pour over ice into a tall glass and drink with a thick straw. Serves 4
