Richard Ousby & James Sexton young winners – Dessert Competition Entry

Summer Berries with Yuzu Ice-Cream and Sesame Brittle added nother spectacular entry for our dessert competition, Electrolux Appetite for Excellence winners Richard Ousby, Quay (young Chef) rocked us with his dessert all made in the studio. James Sexton formerly Sepia and now with Oscillate Wildly (young Waiter) brought in some interesting matches including Floc de Gascogne Rose and an aged Sake – 1997 Asahigiku Junmai Sake from the Fukuoka Prefecturean, making this a truly unique and fun show.

Phee Gardner the wonderful organiser of the annual awards was her usual delightful self. Stewart White, VP of the Australian Association of Food Professionals took the hot seat for a while although highly intelligent and owning a superior palate I am not sure he is as sexy or as silly as me. Dessert Competition – Stefano Manfredi Serves Up His Entry – Pumpkin Pudding with Anise Cream

There is always a thrill when I get a chef heavyweight into my studio. Stefano Manfredi is one of those Chef’s, a man who has set a benchmark in the Australian culinary world and who has just been recognised by the Restaurant and Catering Association by being inducted into the Awards for Excellence Hall of Fame. Plus Stefano is fun, he has a wicked sense of humour and is very down to earth. In all of this he is very passionate about produce and his latest venture Balla at The Star is beautifully constructed. Make sure to visit the private dining room to gaze at the fascinating dining table. The kitchen is vast, full of action and the colour scheme is bright and clean with touches of blue and aqua.Watch the video highlights lots of fun and good information. Bulls Eye Pumpkin Pie

The charming Chairman Robbie Robertson from Table4Ten happily joined in on our fun show. Table4Ten is a fantastic event held each year in aid of prostate cancer. This year 3 states took part. Tickets sold for $250 buy you a seat at a table at a fantastic restaurant which generously donates the table to this very worthy cause. Plus after the dinner you are whisked away in a bus to a secret location and entertained at a private party. This year my name is on the list!

Stewart White, my often co-host and this competitions co-judge entertained us with his wine knowledge as we tried to match the wines to the dessert entry. Stewart is always interesting a head full of factual and frivolous facts and figures.

The New Black, The Star – Review

Yup my list of top five restaurants just got amended. My list is forever evolving and works on a six month rotation. I use these restaurants as my benchmark for determining how others are placed considering things like interior, produce, technique, consistency and innovation. I think over time I have managed to hone my eating passion into a skill so I value my top 5 as do my friends. So it is with pleasure that I now add Teage Ezard’s restaurant Black at The Star onto the list. It sits proudly next to my other favourites like Four in Hand, Ormeggio at the Spit, Pendolino and Marque. I do have a second list but we can explore than some other time and I also have a Don’t ever at there list too.

Black is hot, not only is the interior a fusion of New York meets Sydney but it is spacious without being cold, it is dark without being somber. The entire brand is continued through the venue from the iPad wine menu’s, American accented wine list to the black salt and textured crockery. We were greeted by two lovely tall rather beautiful young women who graciously seated us and then we proceeded to watch an array of glamorous people stroll through to their tables. It was fun!

New York Meets Sydney - Black Hip and Sexy

The meal began with what I refer to as Fool’s Gold, that would be the bread. It fills you up and then you have no space for the good stuff after. However in this case rather than avoid it I devoured it. Buttery soft served with creamy butter and designer black salt it set the tone. We opted for the highlight dishes starting with the fat succulent oysters with Yuzu and Wakame Jelly $12, three little treasures so delicious and simple you could have eaten them all night.

The Spanner Crab $29 with Avocado, Butter Lettuce, Apple Remoulade, Parsley Ginger Meringue was a taste sensation. The dehydrated meringue a textural, taste  highlight. This was  followed by the Organic Farm Egg and yes many top restaurants do a version of breakfast as a quirky menu addition few are a success this one is a true treat. The Potato Cream, White Alba Truffles, Iberico Ham and Herb Salad make you want to lick the plate.

The Main of Blue Eye was perfectly cooked highlighted by the warm Quinoa Ragout, Soft Egg, Leek, Chorizo, Truffle and Parsley Sauce $43. While you would expect this to be a combination of too many flavours it was actually clean, light and the flavours announced themselves with confidence. The Wood Burning Grill offered some sensational beef cuts my 200g Flat Iron  Grain Fed Wagyu, marble score 9+ $59 was to my mind my perfect steak. A rectangular visual delight cooked to perfection,  rare and yet not bloody accompanied by the most delicious Parsnip Fritters with Coconut, Tumeric Caramel $10 that have followed Teage from Melbourne. The homemade BBQ sauce was dense and rich and the Argentinian Chimichurri spicy and authentic. Steaks range up to a 180g  Striploin Grain Fed Wagyu, marble score 9+ $95.

Well and then there was dessert. Truly a love affair as the chocolate ball with gold leaf slowly melted to revealed a delectable banana ice cream. It hits the taste buds and you go to heaven, $22.

Exclusive Interview with Massimo Mele & Gingerbread Folk

I have been on a hunt for the best tiramisu for some time now and have not been able to top my favourite which is the one made at Ventuno in Hickson Rd, until now. Massimo Mele Executive Head Chef of Hugo’s has taken the lead with the delicious, perfectly balanced scrumptious tiramisu that he brought onto the show. He is a real professional and a delight to interview. Massimo is fun and personable and has helped Hugos take out the Pizza Awards year after year (too many to name). Ill be looking for an excuse to get him back on the show some time soon.

I often look at products beautifully packaged in the shops and wonder who is behind them? Who makes them and how much love is going into them. The delightful Karen Sharman owner of Gingerbread Folk loves her product. All her ingredients are sourced locally and they are totally egg free. Healthy and ethical Gingerbread… I love it! The beautiful kits that you can make with your children are inspiring I made one with my son a few years back and it was such a special thing to do together (Ok mine did fall down because I got the wrong consistency but I would expect nothing less from myself). During the week we will be giving away a Gingerbread Folk house kit and a tree kit.

Chef Alessandro Pavoni Teaches Me Italian & Win Wine

Alessandro Pavoni from Spiedo Restaurant and Bar teaches me the language of love. Spice up your life with Zaatar from Sami’s Kitchen and become an Optimiste with some very, very good wine. The latest FoodinFocus radio show was all about quality. I love Alessandro, his food is honest, his produce excellent and for value you can’t beat it. No matter if you are going rustic and real at Spiedo on Level 6 Westfield in the City (Sydney) or a little more modern at Ormeggio at the Spit (Spit Bridge) you can’t go wrong. Plus the Chef brought in the sexiest cheese I have ever eaten. Aromatic deeply delicious. We then went from Italy to Lebanon and sampled some of the fantastic spice blends from Sami’s Kitchen, Hayssam Bejjan cooked up some of his mothers favourite recipes and left us wanting more. The team Sharlene and Steve Dadd from Optimiste Wines are warm and wonderful, when you want a boutique, restaurant quality wine  you need to pop onto their website and have a look. I loved all three wines including the often maligned  semillon, the Optimiste 2011 “Paris in Spring” rose is deep in colour and easy to drink and the  2008 petit verdot was smooth and lovely. I will hopefully be working with all three of these great brands during my Limited Table exclusive food adventures.

Time to Pause and Watch the Fun – Wine Giveaway

On Saturday I welcomed the boys from Selah a lovely restaurant situated in Loftus Street, Circular Quay. The ever self depreciating Chef Gavin Foster and Restaurateur Sam Pask added some fun to the studio. Their new look venue and Gavin’s great food make for a winning combination. My little great find Redbelly Blood Oranges were a highlight. Delicious fruit and Oh that blood orange marmalade, Len Mancini delighted us with his fruitful stories. And the always wonderful Justin Walters who brought three fantastic wines from Yealands Estate. The Pinot Gris 2010 the Reserve Sauvignon Blanc 2009 (Which I loved, loved, loved) , and the Pinot Noir 2009.

Sarah Crowe of Bimbagen

I am so lucky to have so many passionate wine makers and wine experts on my show. Sarah Crowe Senior Winemaker from Bimbadgen is no exception. In fact she is rather special. A woman in a very male dominated world, who was the recipient of the Hunter Valley Wine Industry Association’s Hunter Legends “Rising Star of the Year” Award in 2009.

For a girl from the coastal town of Wollongong, New South Wales, who went to the Hunter Valley to explore horticulture she has done amazingly well. Sarah works on a range of wine varietals across the Bimbadgen range.  Bimbadgen is going through a brand extension and part of this is taking a strong stance on environmental sustainability; a new bottle is being used that is 28 percent lighter than previous bottles for its wine range, saving 140g per bottle. Across a yearly production, this equates to an approximate 42,000 kilograms of glass saved per annum. I am passionate about sustainable living and recycling so this is good news.

when I am next in the Hunter  I will be visiting Esca their restaurant that has just released its highly anticipated winter menu. This features gastronomic delights inspired by fresh local Hunter Valley produce.  Signature dishes within Esca are the Tasting Plates, available in red and white wine options. These tasting plates offer three ‘tastes’ from the Esca Menu, presented with a taste of the matching Bimbadgen wine – an introduction to the food and wine matching process which is always so much fun.

Also put a note in the diary about the ‘Day on the Green’ concert series.  These are held at the property’s outdoor amphitheatre overlooking the magical vineyards and they have  just announced American rock legend Meatloaf to feature on October 8, 2011 and jazz-rock legends Steely Dan and Steve Winwood on Saturday, October 22, 2011. Wine, food and music can’t  go wrong there.
